Method
This is the recipe you make when someone says "oh, you're a pescetarian? What do you even eat?" and you need to shut them up with something incredible in under 20 minutes.
Pat the salmon dry and season generously with salt and pepper. Heat a skillet over medium-high, add a little oil, and place the fillets skin-side down. Do not touch them. Seriously. Leave them alone. Cook until the skin is crispy and golden and the fish is about 80% cooked through, roughly 6–8 minutes. Flip gently, cook 1–2 minutes more, then transfer to a plate.
In the same pan (don't you dare wash it), melt the butter over medium heat. Add the garlic and cook until it smells like the reason you're alive, about 30 seconds. Stir in the lemon juice and parsley. Spoon the garlic butter over the salmon.
Serve immediately. Accept compliments. Deflect questions about whether fish have feelings.
