This is the dish that makes people say "you made this at HOME?" Yes. In 14 minutes. While watching TV. The secret is that seared tuna is actually stupidly easy — you just need good fish and a hot pan.
Mix the soy sauce, sesame oil, rice vinegar, ginger, and honey in a small bowl. That's your dipping sauce. Done.
Combine the white and black sesame seeds on a plate. Pat the tuna steaks dry, then press them firmly into the sesame seeds on all sides. You want full coverage. No bare spots. This isn't a partial commitment situation.
Get a skillet absolutely screaming hot. Add a thin layer of neutral oil. Sear each side for 60 to 90 seconds. The outside should be golden and crusted, the inside should be ruby red. If the inside is cooked through, we need to have a conversation about heat management.
Slice against the grain about 1/4-inch thick. Fan it out on a plate because you have standards. Serve with the dipping sauce, some wasabi, and pickled ginger.
